Bavette Steak Aji Verde Sauce

My go to sauces for accompanying steaks used to be Salsa Verde, Peppercorn or Chimichuri until I discovered Peruvian Aji Verde!  Ever since I first shared a Bavette steak recipe, I’ve had so many people comment on how this cut of beef is a game changer. I love the flavour as much as fillet yet it’s a third of the price which means you can really go to town on the quantities! 
Aji Verde will also work with chicken and fish.

Prep: 5 minutes
Cooking: 5 minutes plus resting
Total: 15 minutes

INGREDIENTS

For the Aji Verde:-
30g fresh coriander
2 jalapeño, topped (seeds removed unless you like your sauce super hot)
1 tbsp white wine vinegar
1 garlic clove
1 tsp salt
Juice of a lime
1/2 tsp ground cumin
4 tbsp mayo

1kg Bavette steak

Simply blitz all the Aji Verde ingredients together in a blender and pour into a bowl.

Generously season the steak and drizzle over olive oil.

Get a pan or barbecue hot and sear for 60-90 seconds on each side. Rest and slice then serve.

Drizzle over the Aji Verde.
