Speedy and Healthier Carbonara

Carbonara sauce made the traditional Italian way is so much easier than you’d think – it’s just eggs, Parmesan and cream combined and poured over hot pasta. The heat from the pasta cooks the sauce. I don’t tend to keep cream in the fridge so instead I made my sauce with Greek Yogurt (you could also replace the cream with creme fraiche). Adding peas and spinach adds extra goodness to this 10 minute meal.

INGREDIENTS

320g Pasta
Bacon lardons or bacon cut into pieces
2 garlic cloves crushed
3 eggs
50g Parmesan grated
3 tbsp Greek Yogurt, cream or creme fraiche
100g peas
100g fresh spinach

Cook the pasta according to packet instructions. Add the peas for the final 3 minutes of cooking.
Heat a frying pan and add the bacon with a small amount of oil. Colour for 6-8 minutes adding the garlic for the final 2 minutes.

Whisk the eggs and add the cheese and Greek Yogurt or cream. Season.

Drain the pasta and peas and return to the pan. Add the bacon, spinach and carbonara sauce. Give everything a stir and serve with extra Parmesan and fresh basil.
