Watermelon, Halloumi and Giant Couscous Salad with Balsamic Glaze
I love watermelon in salads. It works really well with feta but I have paired it with Halloumi (Mia’s fav) and added wholewheat giant Couscous to make it a fresh but satisfying meal.
Prep: 20 minutes
Cooking: 4-6 hours
Total: 4.5-6.5 hours
⠀ INGREDIENTS for 6
1 small watermelon peeled and cut into chunks
1 small cucumber cut into chunks
2 tbsp olives
2 tbsp balsamic glaze or balsamic vinegar
Extra virgin olive oil
Cook the Couscous according to packet instructions. Douse with some olive oil and fork it over so that it doesn’t stick.
Slice the Halloumi and put it in a hot pan for a couple of minutes each side.
Peel and cut the watermelon into chunks.
Combine all the ingredients in a bowl or on a platter and finish with a drizzle of extra virgin olive oil and the balsamic glaze
