Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Asian Duck and Watermelon Salad
A really vibrant salad filled with interesting flavours and textures.
Prep: 10 minutes
Cooking: 1 hour 30 minutes
Total: 1hour 40 minutes
4 duck legs
3 teaspoons Chinese 5 spice
5 spring onions chopped into matchsticks
180g watermelon chopped into matchsticks
1-2 red chillies cut into strips
1/2 cucumber cut into matchsticks
1 Chinese leaf lettuce shredded
juice 4 limes
zest of 1 lime
1 clove garlic crushed
1 thumb sized piece of ginger grated
4 tablespoons soy sauce
2 tablespoons olive oil
Dust the duck with the Chinese five spice and season generously. Roast on a rack (to let the fat drain away) at 180 degrees for 1 hour 30 minutes. leave to rest for 10 minutes.
Shake the dressing ingredients in a jar and set to one side.
Chop all of the salad ingredients as mentioned above and assemble in a large bowl.
Shred the duck and toss with the salad and dressing.
