Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Cajun Chicken, Pepper & Courgette One Pot

The inspiration for this came from the traditional Cajun dish Gumbo which starts with a roux and uses Okra. In place of the Okra I used seasonal courgettes and last minute I scrapped the idea of the roux. So it’s not really a Gumbo at all!! More a fragrant and fresh one pan chicken dinner full of goodness and packed with flavour thanks to my favourite Cajun spice blend.

INGREDIENTS

1 onion chopped
3 garlic cloves crushed
1kg breasts each cut into 4 strips or use mini fillets
2 tbsp Cajun Spice Mix
200g Courgettes cut into batons
2 red peppers cut into chunks or I used 6 baby peppers halved
200g chopped tomatoes
200ml chicken stock
Sliced spring onions & herbs to finish

To make your own Cajun Spice Mix:-
1 tsp paprika⠀⠀
1/2 tsp black pepper⠀⠀
1/2 tsp cayenne pepper⠀⠀
1 tsp dried oregano⠀⠀
1 tsp dried thyme⠀⠀
1/4 tsp chilli flakes⠀⠀
1/2 tsp salt flakes⠀⠀

If making your own Cajun spice mix combine all your spices in a bowl.⠀⠀

Heat 1 tbsp oil in a pan and add the onion. Soften for 5 minutes before adding the garlic, chicken and 2 tbsp Cajun spice mix.

Add the peppers. Colour on a medium heat for 15 minutes then add the courgettes, chopped tomatoes & stock. Bring to simmer, cook for 10 minutes and serve with a scatter of spring onions & herbs.

Serve with rice or your choice of potatoes and a green salad.
