Cajun Dirty Rice With Prawns

Dirty Rice with Prawns. A classic Cajun dish that uses either pork mince, chicken or shrimp. Or a combination of the three. Here I’ve gone with a “shrimp” version, King Prawns to us Europeans. This dish is a great alternative to a Risotto. It’s all cooked in one pan and takes just 15 minutes.

Serves: 4 Prep: 5 minutes Cooking: 10 minutes Total: 15 minutes Difficulty: easy  

INGREDIENTS

1 onion chopped

2 garlic cloves crushed
1 red pepper or 2 Romano peppers – I used yellow and red – chopped
2 tbsp Cajun Spice mix – to make your own see below
200g Basmati rice
500ml Chicken stock
500g raw peeled King Prawns
3 spring onions sliced
1 red chilli chopped (optional)
Cajun Spice Mix:- 1/2 tsp chilli flakes 1 tsp ground cumin 1 tsp smoked paprika 1 tsp ground coriander 1 tsp dried oregano 1/2 tsp salt

Soften the onions in a lug of oil for 5 minutes.

Add the garlic, pepper and spice mix. Give everything a stir and continue cooking for 2 minutes.

Add the rice and the stock. Simmer for 8 minutes.

Add the prawns, give everything a stir and pop a lid on the pan for 5 minutes or until the prawns are cooked.

Finish with the spring onions, optional chilli if you like more heat and fresh parsley.
