Chicken and Chorizo Orzo

Here’s a really simple 15 minute dinner idea. Orzo is cheap to buy and kids love it. It’s a great alternative to using Arborio/risotto rice. The end result is similar to a risotto without the requirement to stand over a pan and stir for 30 minutes. You could finish with spinach but for a change I used Rocket. Uncooked Rocket can be too peppery for children but I’ve found by wilting it in (like you would spinach) at the end of a dish the flavour mellows.

INGREDIENTS

300g Orzo
1 onion finely chopped
3 garlic cloves crushed
150g cooking chorizo diced
75ml white wine
400g (I can) chopped tomatoes
100g frozen peas
3 cooked chicken breasts shredded or chopped
100g Rocket leaves
Grated Parmesan to finish

Cook the Orzo in boiling water for 9 minutes.

In a large frying pan or casserole add a lug of olive oil and soften the onion.

Push the onion to one side and to the other side of the pan add the diced chorizo. Once it starts to colour (it will do so very quickly) add the garlic to the pan followed a splash of wine (totally optional!) Stir in the chopped tomatoes and simmer for 5 minutes. Season, add the peas and simmer for 5 minutes more.

Drain the Orzo and add it to the sauce together with the shredded chicken.

Give the pan a stir, wilt in the rocket leaves and serve!
