Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Chicken Provencal

The combination of these flavours are amazing! We’ve added spinach to up the dish’s nutritional value. So simple to make, colourful, hearty and healthy. What’s not to like?

8 chicken thighs⠀
1 red onion chopped⠀
1 jar mixed olives and peppers (we used Fragata)⠀
3 cloves garlic crushed⠀
400g chopped tomatoes⠀
100ml red wine⠀
100g fresh spinach⠀
Fresh thyme⠀ ⠀


Season then colour the chicken thighs in a hot pan with a splash of olive and set aside.⠀

Add the onions and soften and colour for 5 minutes. Add all the other ingredients apart from the spinach and thyme. Simmer for 5 minutes and season.⠀

Add the chicken thighs. Make sure the skin isn’t covered in the sauce. Put in the oven (180 fan, 200 conventional) for 40 minutes.⠀ ⠀

Wilt in the spinach and sprinkle over the fresh thyme.

Serve with green veg and mashed potato.⠀
