Chicken Satay Skewers

I’m hoping these chicken dippers will be a welcome and versatile addition to your weekly meal plan. Serve in wraps or pittas for lunch, with rice/noodles and a green veg for an evening meal or as a canapé or pre dinner canapé!

INGREDIENTS

For the Skewers:
3 chicken breasts
2 tbsp soy sauce
1/4-1/2 tsp chilli flakes
2 garlic cloves crushed
1 tbsp ground nut oil
1 tbsp brown sugar

For the Satay Sauce:
175ml coconut milk
3 tbsp smooth peanut butter
1 tbsp mild curry powder
1 tbsp soy sauce
1 tsp honey
Juice of half a lime

For the sauce mix together all the ingredients apart from the coconut milk in a pan. Stir in the coconut milk and put the pan on a low heat. Simmer for 5 minutes. If the mixture looks too thick, add a splash more coconut milk or water.

Cut each chicken breast into 6 thin strips lengthways.

Combine the soy, chilli flakes, garlic, sugar and oil in a bowl then add the chicken. Leave to marinade if you have time.

Thread each chicken strip onto skewers and place them on a baking tray lined with baking parchment.

Cook in the oven at 190, 170 fan for 10 minutes.
