Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Chicken Shish Kebabs

Part of a pick and mix dinner, I like to serve these Kebabs alongside a big bowl of couscous, seared Halloumi (delicious coated in sweet chilli sauce), hummus, wraps and a chopped salad. Something to please everyone! The boys like to encase the chicken, salad & hummus in a wrap, I like the kebabs on a bed of couscous with a salad side & a dollop of hummus.

Prep: 5 minutes plus marinading
Cooking: 25 minutes
Total: 30 minutes

INGREDIENTS

1kg chicken thighs each cut lengthways in half
3 tbsp Greek yogurt
2 tbsp tomato purée
1 tsp Smoked Paprika
1 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp dried chilli flakes (more if you want heat)
2 garlic cloves crushed
2 tbsp olive oil
1 tsp salt
Juice of a lemon

Simply mix together all the ingredients apart from the chicken to make a paste and add the chicken making sure it’s completely coated.

Ideally let the chicken to marinade covered in the fridge for a few hours.

Skewer the chicken and lay on a baking tray lined with baking paper.

Cook in a hot oven (200 fan) for 25-30 minutes, turning half way through. If you use breasts, reduce the cooking time to 20 minutes.
