Chicken Tagine

Here’s my 30 minute minimal effort Chicken Tagine. Simply whizz up the tagine paste add stock and squash (you could add sweet potato instead) and add ready cooked chicken. I used ready cooked breasts but this is a great way to use up leftover chicken. Simply omit the chicken, add a can of chickpeas and you have a vegetarian Tagine!

INGREDIENTS
Paste⠀
2 onions⠀
5 garlic cloves⠀
10cm ginger⠀
300g fresh tomatoes⠀
30g Fresh Coriander, stalks only, reserve the leaves⠀
3 tsp Ras el Hanout⠀
1 tsp Belazu Rose Harissa⠀
1 tsp cumin⠀
1 tsp salt⠀
1 tsp brown sugar⠀
⠀
200g chicken stock⠀
500g cooked chicken breasts roughly shredded
1 sliced preserved lemon deseeded or the Juice of a lemon⠀
100g dried cherries or chopped apricots
350g cubed squash
Fresh coriander
2 tbsp toasted flaked almonds⠀

Throw all the paste ingredients into a food processor and blitz.⠀
⠀
Heat some oil in a casserole and add the paste. Cook for 10 minutes before adding the stock and cubed squash. Simmer for 15 minutes.⠀

Add the cooked chicken, cherries and lemon. Cook for 2 minutes. Finish with fresh coriander and toasted almonds.
