Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Asian Salmon

This 15 minute pasta dish requires just a few ingredients. You can switch the prawns for chicken strips or keep it vegetarian adding more tomatoes. For my “something green” I’ve added tender stem to the pasta water half way through and wilted in spinach at the end.

INGREDIENTS

350g dried pasta
500g raw king prawns
4 garlic cloves chopped
2 fresh red chillis chopped
2 tbsp oil
200g fresh tomatoes
80ml white wine
Zest of a lemon
2 handfuls spinach
200g tender stem
Fresh basil

Cook the pasta according to packet instructions and add the tender stem for the final 3 minutes of cooking time.

Heat the oil in a pan and add the garlic, chilli and prawns. Cook for 4 minutes letting the prawns take on some colour.

Add the tomatoes, lemon zest and wine, season and let it bubble.

Drain the pasta and tender stem. Add to the pan with the prawns.

Wilt in the spinach and finish with fresh basil.
