Chipotle Prawn Bruschetta

I know I’m mixing my cuisine’s using Mexican inspired flavours as a topping for a Bruschetta but these bites are delicious and take 10 minutes to make. The prawns, guacamole and mayo can also be loaded into tacos with salad as a light lunch or dinner.

INGREDIENTS

For the Chipotle Prawns:
12 shell off raw king prawns
1 tsp chipotle paste
1 tbsp olive oil

For the guacamole:-
1 avocado
1 tbsp olive oil
Juice of half a lemon
Salt & Pepper

For the Lime Mayo:
4 tbsp mayonnaise
Juice of a lime

1 French stick, baguette or ciabatta loaf sliced 1.5 cm thick

Mix together the prawns, chipotle paste & olive oil.

Mash the avocado and combine with the lemon juice, seasoning & olive oil.

Combine the Mayo & lime juice.

Get a frying pan searing hot & cook the prawns for 2 minutes on each side.

Meanwhile toast the bread slices under a grill for a minute each side or bake in a 180 oven for 10 minutes.

Spread each bread slice with the guacamole, top with a little lime mayo and then a prawn. I like to butterfly them (just slice down the back leaving the fatter end attached).

Drizzle with any juices from the pan.
