Creamy Tomato Skillet Chicken

What the heck is going on with our weather?! I’ve being trying to push on with summer inspired dishes but today I fancy this hearty one pan chicken creation – my simpler version of Chicken Parmigiana. If the sun does the decent thing and shows it’s face for dinner time I’ll serve it with salad. Otherwise I might go with a pile of mash! It also works well piled on top of pasta or a baked potato.

Cooking: 30  minutes
Total: 45 minutes

INGREDIENTS

4 chicken breasts
1 onion chopped
3 garlic cloves crushed
100ml white wine (or use a splash of white wine or balsamic vinegar)
800g finely chopped tomatoes or passata
100ml double cream or 100g Creme Fraiche
2 tbsp grated Parmesan
Fresh basil chopped

 

Heat an oven proof pan and add 1 tbsp olive oil.

Sear the well seasoned chicken on both sides and set aside.

Add the onion and garlic to the pan and soften. Add the white wine, followed by the tomatoes. Bring to a simmer.

Return the chicken to the pan and simmer on the hob (or pop a lid on the pan and cook in the oven) for 25 minutes.

Remove the chicken (just makes life easier!) and stir in the cream or Creme Fraiche

Return the chicken to the pan, sprinkle over the Parmesan and basil and serve.
