Honeycomb Lasagne

Honeycomb lasagne come cannelloni. We weren’t sure what to call this. It’s essentially a lasagne using Ragu filled Rigati pasta instead of lasagne sheets. Rigati is a large tube shaped pasta. We’ve filled our dish with them, spooned the ragu into the tubes and topped with a cheese sauce. It’s absolutely delicious and a real family pleaser. Admittedly it is fiddly but doesn’t have to look perfect. ⠀

INGREDIENTS


For the ragu:-
800g best beef mince⠀
2 onions finely chopped⠀
2 garlic cloves finely chopped⠀
2 carrots grated⠀
800g chopped tomatoes⠀
30g tomato purée⠀
200g red wine⠀
2 bay leaves⠀
200g good beef stock⠀

500g large Rigati pasta⠀

30g butter⠀
30g plain flour⠀
600ml Milk⠀
100g grated cheddar⠀
125g mozzarella⠀

Make your Ragu. Make double if you want “Bolognaise” sauce for the freezer. Let it cool and spoon into a piping bag.

Make your cheese sauce.

Half cook your pasta tubes and arrange in your dish. See story. Pipe in the ragu roughly, top with cheese sauce, grated cheddar and mozzarella. Bake for 45 mins.
