Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Huevos Rancheros Brunch Bowls
This is a recipe I created using the divine Gem Avocados (exclusively available at Tesco). A deconstructed version of the Mexican dish, Huevos Rancheros, I’ve paired slices of the Gem Avocado with Spicy Chipotle Black Bean Chilli, fresh tomatoes, tortillas, a fried egg and lime wedges.

Total: 30 minutes
2 Gem avocados Sliced
4 tortilla wraps
100g tomatoes roughly chopped
10g fresh coriander sprigs
1 tbsp oil (for frying the eggs)
Black Bean Chilli:-
1 tbsp olive oil
3 bell peppers, cored and sliced
1 red onion chopped
3 garlic cloves crushed
800g (2 cans) black beans, drained
2 tbsp Balsamic Vinegar
4 tsp smoked paprika
2 tsp ground cumin
4 tsp Chipotle Paste
400g chopped tomatoes
Salt and Pepper
Make the Black Bean Chilli first. Sauté the onion in the olive oil for 5 minutes before adding the garlic & peppers.
Colour for 2-3 minutes before adding the balsamic. Then the black beans, paprika, cumin, chipotle paste & chopped tomatoes.
Add ½ tsp salt & a few grinds of black pepper. Simmer for 15 minutes.
Meanwhile toast the tortillas in a dry frying pan for 2 minutes on each side. Cut into wedges.
Peel, stone & slice the avocados.
Heat 1 tbsp oil in a large non stick frying pan & crack in the eggs. Leave to cook for a few minutes.
Create your breakfast bowl by serving the chilli, tortilla wedges, avocado slices and tomatoes in sections. Top with the fried egg, coriander & lime wedges.
