Orkney Crab Claw & Avocado Blinis

Top with slices of fresh avocado, the dressed Orkney Crab Claw meat from Aldi and some pomegranate seeds and you have the most delicious festive canapés. You can cheat by buying ready made Blinis or make your own using the recipe below.

INGREDIENTS
12 blinis
100g Specially Selected Exquisite Orkney Crab Claw Meat
1 avocado halved, peeled, stoned and thinly sliced
2 tbsp pomegranate seeds
½ tsp Dijon mustard
1 garlic clove crushed
Juice of half a lemon
3 tbsp mayonnaise
Few pinches of salt & pepper
2 fresh chives chopped
For the blinis:
100g plain flour
1 egg separated
150ml milk
25g melted butter
Oil for cooking

Whisk the egg white until stiff.
Add the flour, egg yolk and half of the milk to a bowl and whisk until smooth.
Add the melted butter then fold in the egg white.
Heat a non stick pan and wipe with a little oil. Drop in 2 tbsp of the batter. You can make a few blinis at a time. Leave to colour for 2 minutes. When you see the bubbles on top, flip over and cook for another 2 minutes. Continue with the rest of the batter.
Mix together the crab meat, salt, pepper, mustard, lemon juice, garlic and mayo.
Thinly slice the avocado.
Top each blini with 3 slithers of avocado, a teaspoon of the dressed crab, a scattering of pomegranate seeds and some chopped chives. Serve!
