Orzo with Pea, Bacon & Avocado
Orzo with Pancetta, Avocado and Peas. If you haven’t yet tried Orzo, you must! It’s a great alternative to traditional pasta shapes or rice. This budget meal, ready in just over 10 minutes is incredibly versatile. You can serve it hot or cold as a pasta salad.

INGREDIENTS
400g Orzo
200g Bacon lardons (or bacon/pancetta) cut into strips
200g frozen peas
1 avocado, diced
3 tbsp extra virgin olive oil
Juice of half a lemon
3 tbsp grated Parmesan
4 spring onions, trimmed and sliced
Fresh mint and basil

Cook the bacon bits in a frying pan with a tsp of oil until golden.
Cook the Orzo in boiling water for 9 minutes, adding the peas to the water for the last 4 minutes.
Drain the Orzo and peas and toss together with the avocado, bacon, Parmesan herbs, lemon juice and olive oil.
