Prawn and samphire linguine

A super quick fresh and healthy pasta dish. To feed 4:-⠀

400g dried linguine⠀
400g raw king prawns⠀
180g samphire⠀
180g fine asparagus tips⠀
200g cherry tomatoes halved⠀
2 cloves garlic, crushed⠀
1 small onion or large shallot finely chopped⠀
60ml white wine⠀
1/2 lemon⠀

Cook the linguine according to the packet instructions.⠀

Sweat the onion and garlic in a lug of oil. Add the wine and reduce by half.⠀

Add the asparagus tips. After one minute add the prawns and put a lid on the pan. Steam for 2 minutes before adding the Samphire and tomatoes.⠀

Stir and add a squeeze of lemon and season.⠀

When the prawns are pink add the linguine to the pan together with a small amount of the pasta water and combine before serving into bowls.⠀
