Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Sage, Garlic, Mushroom & Spinach Gnocchi

Just 6 ingredients, this vegetarian one pot takes 10 minutes to make and costs about £2 a head. Switch the butter for olive oil and not only is the dish even healthier and vegan.

600g fresh Gnocchi
150g fresh Spinach
300g small chestnut Mushrooms,
10 sage leaves
3 garlic cloves crushed
2 tbsp olive oil or 2 tbsp butter

Simmer the gnocchi for 3 minutes and drain. Add the oil or butter to the pan and add the sage leaves. Once they’ve gone crisp (about a minute) lift them out and set aside.

Add the garlic to the pan with the mushrooms. Sauté for 2 minutes before adding the drained gnocchi. Sauté for a couple of minutes so that the gnocchi takes on some colour. Season with salt and pepper.

Add the spinach and allow it to wilt and serve topped with the crisp sage leaves.
