Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Sambal Sticky Indonesian Chicken
This Indonesian one pan chicken dish was inspired by a Sambal Oelek paste I had. Sambal Oelek is a chilli based paste but combined with other Asian condiments, some ginger and garlic, it’s not super hot. Mix together the marinade, add chicken thighs (or breasts if you prefer) and roast. Serve with rice or noodles and something green ideally. Broccoli, Pak Choi or Sugar Snaps would be perfect.

INGREDIENTS
8 chicken thighs
3 tbsp Sambal Oelek paste
2 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp honey
1 tbsp fish sauce
2 garlic cloves crushed
5cm ginger roughly chopped
Sliced Spring onions and sesame seeds to finish.
Simply mix together all the ingredients (except the sesame seeds and spring onions). You can do this in a bowl and marinade in the fridge or to save time and washing up, do it directly in a casserole or roasting tin.
Put in the oven (180 fan) for 35-40 minutes turning the chicken at least one during the cooking time.
If using breasts roast for 25-30 minutes.
Finish by sprinkling over the sesame seeds and spring onions.
