Sausages with Onion Cider Gravy

A hug in a pan, this super quick and easy recipe takes bangers (and mash) to a whole new level.

INGREDIENTS

12 free range sausages
2-3 red onions sliced
1/2 tsp Maldon salt
1 heaped tsp Dijon mustard
1 1/2 tbsp plain flour
2 bay leaves
2 tbsp Apple Cider Vinegar
500ml good cider
200ml chicken stock

 


Add 1 tbsp oil to a pan or roasting tray and colour the sausages for 10 minutes.

Add the onions and salt. Cook for 5 minutes.

Lift out the sausages and set aside.

Add the mustard, apple cider vinegar and bay leaves to the onions. Stir in the flour.

Pour in the cider whisking to remove any lumps from the flour, then pour in the stock.

Let the sauce bubble for 10 minutes then return the sausages to the pan. Simmer for 10 minutes and serve with buttery mash and a green veg or two
