Scallop & Chorizo Canapé Skewers

These skewers are a great canape idea. They can all be prepared in one griddle (or frying) pan and take less than 10 minutes. Finish with a cranberry and splash of green from a single basil leaf and they look super festive for Christmas.

INGREDIENTS

12 Large Raw Canadian Scallops
1 Aldi Specially Selected Chorizo Ring
12 basil leaves
12 cranberries
Juice of half a lemon
1 tsp runny honey

Heat a griddle until it is smoking hot.

Slice the chorizo into 2cm rings and sear on each side for 1 minute. Set aside.

Add the scallops to the griddle. Cook for two minutes each side. Squeeze over the lemon juice, let it caramelise for a couple seconds then set aside the scallops.

Add the cranberries to the griddle pan for one minute squeezing over the honey.

Skewer one piece of chorizo, followed by one scallop, then a basil leaf and a cranberry.

Present on a platter and serve!
