Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Spanish Chicken, Bean and Chorizo One Pot
Such a simple but full of flavour family one pot. You could replace the beans with chickpeas and use breasts instead of thighs.

1kg boneless, skinless chicken thighs
2 tbsp seasoned flour
2 onions chopped
5 garlic cloves crushed
2 cannellini beans drained
2tsp hot smoked paprika
500g cooking chorizo sliced
300ml medium sherry
400ml Chicken stock
Fresh thyme to serve
Toss the chicken thighs in the seasoned flour and colour in batches in a large casserole pan. Set them aside.
Add the onion and chorizo to the pan and colour for a minute or two.
Add the garlic and paprika then return the chicken to the pan.
Give everything a stir, add the sherry and stock then bring to the boil. Stir in the cannellini beans.
Pop a lid on the pan and put in an oven at 200 degrees (180 fan) for 1 hour.
Alternatively it can go in a slow cooker for several hours.
Finish with fresh thyme and serve with a green of your choice, mashed potato if you want a hearty meal or even crusty bread.
