Spanish Chicken, Chorizo and Bean One Pot
I’ve adapted a vegan bean stew (my spin on a Pisto) recipe of mine to please the carnivores out there adding chorizo and leftover chicken. Serve with your choice of potatoes, rice or crusty bread.

INGREDIENTS
200g cooked chicken or (2 raw chicken breasts diced)
200g cooking chorizo sliced
2 red onions chopped
4 garlic cloves crushed
1 carrot peeled and chopped
1 red pepper chopped
1 courgette chopped
1 aubergine chopped
1 tsp sweet smoked paprika
1/2 tsp hot paprika
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground fennel seeds
1 tsp sea salt
2 tbsp sherry or white wine Vinegar
600ml passata or 2 cans chopped tomatoes
2 x 400g cans beans – any beans! Butter, haricot, black eyed, cannellini….
Fresh thyme and olives to serve

Add a lug of oil to a pan and colour the chorizo and chicken (if using raw). Set aside.
Soften the onion for 5 minutes in the same pan then add the garlic.
Add all the other vegetables and then the spices.
Give the pan a stir then add the vinegar followed by the passata, beans reserved chicken and chorizo.
Simmer for 30-40 minutes and finish with a handful of olives and fresh thyme.
