Spiced Monkfish with Curried Cauliflower Puree

This dish is prepped and pulled together so quickly it’s a great midweek meal but also impressive enough to serve for an effortless dinner party.

INGREDIENTS

2 monkfish fillets

Marinade:-
2 Tbsp lemon juice
1 Tbsp Garam Masala
1/2 tsp salt
1 Tbsp olive oil

Cauliflower purée:-
1 head of cauliflower broken into florets⠀
1 medium onion finely chopped ⠀
1/2 teaspoon cumin ⠀
1/2 teaspoon ground coriander ⠀
1/2 teaspoon turmeric ⠀
4 cloves garlic -1 sliced 3 crushed⠀
1/2 red chilli sliced into matchsticks ⠀
Thumbs sized piece of ginger cut into matchsticks ⠀
200 ml Stock

Combine the marinade ingredients in a small bowl and coat the fish. Season well with salt and pepper.⠀

Fry the onion until caramelised, then add the garlic and fry for another minute. Now add the spices, throw in the cauliflower and stir. Add the stock and steam with a lid on until tender – roughly 8 minutes. Season, add a squeeze of lemon and blitz, loosening with extra stock if necessary to make a smooth purée.⠀

Roast the monkfish for 12 minutes at 200 degrees.

Serve the monkfish on top of the cauliflower puree and with wilted spinach.
