Spiced trout with celeriac salad

This is a really healthy 15 minute meal. Celeriac contains potassium which our bodies need to manage blood pressure. It also contains high amounts of vitamin K and phosphorus – essential for healthy bones. This was a Waitrose recipe using salmon. We’ve used trout for variety and have tweaked the celeriac salad. Trout is high in omega-3 fatty acids and is an excellent source of the B-vitamin complex.

2 trout fillets⠀
1/2 tsp ground cumin⠀
1/2 tsp ground coriander⠀
1/2 tsp chilli flakes⠀
1 tsp groundnut oil⠀
1 small celeriac bulb⠀
1 lemon⠀
1 tbsp Creme Fraiche – we used Tims Dairy
1/2 tsp Dijon mustard⠀
1 tbsp extra virgin olive oil⠀
1 tbsp chopped parsley⠀

Mix together the spices and groundnut oil and rub over the fillets. Season and place on a baking sheet.⠀

Take the hard skin off the celeriac and rub the whole bulb with lemon juice to stop it browning.⠀

Grate or finely chop the celeriac squeezing over lemon juice as you go. It can turn brown quickly!⠀

Stir in the mustard, olive oil and parsley and set aside.⠀

Cook the trout fillets for 5 minutes and serve with the celeriac, green salad and lemon wedges.⠀
