Spinach, Caramelised Onion, Tomato & Goats Cheese Tart

I made this with a jar of Belazu’s Smokey Tomatoes but you can just use sun-dried tomatoes in their place. There are so many variations of this tart and they are so quick to make. The most laborious part of this was caramelising the onions! Not exactly a huge chore!

INGREDIENTS⠀⠀⠀⠀⠀⠀⠀⠀⠀
320g puff pastry sheet
2 red onions sliced
1 tbsp Balsamic Vinegar
200g fresh spinach
1/2 jar (160g) Belazu Smokey Tomatoes
100g goats cheese
2 tbsp pinenuts
Add the onions to a frying pan with a lug of olive oil and 1/2 tsp salt and soften over a medium heat for 10 minutes. Add the balsamic vinegar and cook for a further 2 minutes.
Put the spinach in a colander and pour over boiling water to wilt it. Let any excess water drain through.
Unroll your pastry sheet onto a parchment paper lined baking tray. Using a knife score a border 2cm wide all the way around the pastry and spoon the onions into the middle section.
Add the spinach and tomatoes and goats cheese. Sprinkle with the pine nuts and put in a 180 degree oven for 15 minutes.
Finish with fresh thyme if you have it.
