Steak Bites

This is one of my favourite speedy weekend dinners. For these bites I’ve used rump which is much kinder on the purse than sirloin or fillet and as it’s a lean cut, is best cooked in a searing hot pan for just a couple of minutes. I like to serve the bites drizzled with the buttery juices from the pan, French Fries & peas.

INGREDIENTS

800g trimmed rump, sirloin or fillet steak cut into 3cm cubes
1 1/2 tsp garlic salt & 1/4 tsp black pepper
1 tbsp olive oil
1 1/2 tbsp butter
2 tsp chopped rosemary

Get a pan searing hot and add the oil.

Season the steak bites with the garlic salt and add to the pan in a single layer making sure there’s space between the pieces (you can cook the bites in two batches if the pan is not big enough).

Leave the bites for 2 minutes then turn them over. Add the butter and the rosemary and take off the heat. Give the pan a toss so the bites get covered in the melted butter and rosemary. Leave to rest for 3 minutes in the pan. Tip into a bowl to serve. You can deglaze the pan with a splash of boiling water and add this as a drizzle too.
