Sticky Pork Ribs & Coleslaw

You may think that ribs need to be cooked and marinaded for hours but I promise they don’t. These ever so simple Ribs are ready in just over an hour. Perfect served with the 2 minute coleslaw.

Total: 1 hour 10 minutes

INGREDIENTS

1.3kg Pork loin rib racks
2 tbsp olive oil
1 tsp Maldon salt & 10 grinds black pepper
4 garlic cloves crushed
1/2 tsp chilli flakes
1/2 tsp Sichuan pepper corns crushed
4 star anise
10cm ginger sliced
3 tbsp honey
3 tbsp soy sauce
300ml Japanese Rice Wine
Bunch spring onions sliced
400ml chicken stock

Coleslaw for 4 :

1/2 white cabbage shredded
2 carrots grated
1/2 onion finely chopped
6 tbsp Greek yogurt
2 tbsp mayonnaise
1/2 tsp dijon mustard
1/4 tsp salt

Heat a roasting tray and add the olive oil. Add the ribs and season them with the salt and pepper.

Leave to colour for 5 minutes before turning them over. Colour on the other side for 5 minutes.

Add all the other ingredients in order and bring the tray to a simmer.

Put the tray in the oven for 30 minutes at 180. Turn the ribs over and cook for another 30 minutes.

Put the tray back on the hob so the sauce reduces and the ribs glaze.

For the coleslaw simply mix together all the ingredients.
