Tandoori Vegetable & Paneer Skewers
These are substantial enough as a meat free meal or they’ll work as veggie side chicken or salmon marinaded in the same paste.⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS
2 small aubergines cut into 1×2 inch pieces⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 courgettes sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 peppers cut into 1×2 inch pieces⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g cherry tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
450g Paneer cheese cut into 1 inch cubes⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tbsp Tandoori Paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
Limes or lemon wedges to serve⠀⠀⠀⠀⠀⠀⠀⠀⠀

For the Tandoori paste:
2 tbsp Greek Yogurt
1 tsp Paprika
1 tsp Turmeric
1 tsp Chilli Powder
1 tsp Ground Coriander
1 tsp Ground Cumin
2 tsp grated ginger
2 garlic cloves, crushed
1/2 tsp Maldon Salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp oil
Juice of 1/2 lemon
⠀⠀⠀⠀⠀⠀⠀⠀⠀
If using wooden skewers soak then first for 30 minutes to stop everything sticking.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mix together the tandoori paste ingredients in a bowl and add the vegetables and paneer. Skewer everything.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Put on a medium barbecue for 12-15 minutes turning every couple of minutes. Spoon over or brush on any remaining paste as you cook.
