Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Vanilla Mascarpone and Raspberry Tart

Definitely one for the weekend! You may have noticed that I don’t many desserts but this is my easy go to when I do. Lighter than a cheesecake, it takes minutes to prepare. The base just needs time in the fridge to set.

Total: 10 minutes + 2 hours refrigeration

INGREDIENTS

260g digestive biscuits
100g butter
1 tbsp caster sugar
500g mascarpone
100g icing sugar
2 tsp vanilla extract
300g raspberries
Fresh mint sprigs to decorate

 


Melt the butter in a large bowl. Finely crush the biscuits and add to the melted butter together with the caster sugar. Give the mix a good stir then tip into a lose-bottomed 23cm tin. I lined the bottom of the tin with parchment. Press down firmly to make a base and refrigerate for a couple of hours.

Mix together the mascarpone, icing sugar and vanilla and spoon on top of the biscuit base.

Top with raspberries and mint. Or you could use strawberries, blueberries, or a mix of berries. Decorate with the mint.
