Vegan Black Bean & Pepper Chilli

 ⠀Try this punchy super healthy, ridiculously tasty vegetarian Chilli. Ready in just 30 minutes. Traditional Chillis use Kidney Beans. We’ve got nothing against a Kidney Bean but Black Beans work better in this dish. They hold their form, are a lovely contrast to the vibrant peppers and are a brilliant source of fibre, potassium, folate and Vitamnin B6. They help lower cholesterol in the blood and are also antioxidant. Peppers are packed with Vitamin C and Iron. Health in a bowl!

250g mixed peppers sliced⠀
2 red onions sliced⠀
2 garlic cloves crushed⠀
400g chopped tomatoes⠀
400g Black Beans⠀
2 tbsp balsamic vinegar⠀
3 tsp chipotle paste⠀ ⠀

Soften the onions in the olive oil for 5 minutes before adding the peppers and garlic.⠀ ⠀
Stir for a couple of minutes before adding the balsamic vinegar and letting it reduce.⠀ ⠀
Add the chipotle paste, chopped tomatoes, black beans, salt and pepper.⠀ ⠀
Simmer for 25 minutes. Serve with rice, fresh coriander a squeeze of lime and warmed tortillas.
