Warm Crispy Kale and Squash Salad

A healthy winter salad – a perfect vegetarian meal or as a tasty side.

Avocado Oil is a great healthy alternative to Olive Oil. It is rich in Oleic Acid, reduces cholesterol, is high in antioxidants and improves heart health.

INGREDIENTS

large bag of chopped Kale

200g peeled and cubed butternut squash

100g pomegranate seeds teaspoon coriander seeds

handful flaked almonds

I chopped red chilli

Avocado Oil is a great healthy alternative to Olive Oil. It is rich in Oleic Acid, reduces cholesterol, is high in antioxidants and improves heart health.

Remove any stalks from the kale and lay on a baking sheet. Sprinkle with plenty of sea salt and avocado oil. Put in a low oven (140 degrees) until crisp, about 1-1 1/2 hours turning in the middle.

Peel and cube one butternut squash. Sprinkle with crushed coriander seeds, chopped chilli, salt and avocado oil. Roast for 30 minutes.
