Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Lamb and Roasted Veg One Pot

A quick alternative to a traditional roast. Everything cooked in one casserole or roasting tray – lamb, veggies and potatoes. Minimal washing up but so tasty. I threw in everything I had in the veg drawer of my fridge. You could add spinac, use sweet potatoes instead of regular potatoes. Flexibility is the name of the game with this dish. 😊

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp olive oil
2 garlic cloves crushed
Rosemary sprigs
8 lamb chops – I used loin chops
500g new potatoes but into 2-3cm pieces
2 red peppers sliced
1 aubergine chopped
1-2 courgettes sliced
200g cherry tomatoes
2 tbsp olive oil
2 tbsp Belazu Balsamic Vinegar

Heat 1 tbsp oil to a pan or roasting tray and sear the chops for a minute on each side.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove and add the rest of the oil, the garlic, rosemary and potatoes to the tray or pan. Colour for 10 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the aubergines and peppers and colour for 5 minutes before adding the courgettes. Give everything a stir then sit the chops on top.

Season the whole pan and put in the oven for 7 minutes.

Add the tomatoes, drizzle over the balsamic vinegar and return to the oven for 6 minutes.
