Simple Sausage Ragu

Simple Sausage Ragu. Ready in 30 minutes, this budget meal is absolutely packed with flavour. Controversially I prefer it to my kids favourite beef bolog. It uses sausages squeezed out of their skin – you could use a pack of sausage meat but the advantage of using sausages is that they are pre-seasoned.

INGREDIENTS

12 Cumberland sausages
1 large onion chopped
2 carrots grated or chopped
3 garlic cloves crushed
1 tsp fennel seeds crushed
1 tsp smoked paprika
1/4 tsp chilli flakes
400g Passata
100ml red wine (or 2 tbsp balsamic vinegar or 1 tbsp soy sauce & 1 tsp brown sugar) All add richness to the sauce.
400g pasta – penne or rigatoni tubes are ideal

Soften the onion for 5 minutes before squeezing the sausage meat out of the sausage skins. Discard the skins. I love this job! 🤗

Add the garlic and break down the sausage meat with a wooden spoon.

Add the smoked paprika, fennel seeds and carrot. Leave for 10 minutes to colour stirring occasionally every minute or so. You want the sausage meat to caramelise.

Cook the pasta according to packet instructions.

Add the wine to the sausage mix, let it bubble then add the Passata.

Simmer for 10 minutes. You could leave it bubbling for 30 minutes if you have time – the flavours will be more intense.

Stir in your cooked pasta and serve with grated Parmesan.
