Asparagus, Pesto & Goats Cheese Tart

Making the most of the short Asparagus Season, another 15 minute meal using just one tray. Serve with tomato salad if you wish. Happy Meat Free Monday or this is perfect as part of a lunch buffet. There is no need to make your own pastry. You will never compete with the ready rolled puff pastry available in supermarkets! You could make your own pesto (see our story highlights on Instagram).

INGREDIENTS

320g ready rolled sheet puff pastry
4 tbsp pesto⠀
300g fresh asparagus⠀
120g goats cheese⠀
1 egg beaten⠀
fresh mint and basil
Salt and pepper, olive oil

Lay the pastry onto parchment on a baking sheet. Score a one inch border around the edge of the pastry.
Brush with the beaten egg.
Put in an oven at 180 degrees for 5 minutes.
Spread the pesto over the middle section of the tart and line up the asparagus spears.
Crumble over the goats cheese and bake for a further 7 minutes,
Sprinkle over the herbs and drizzle with olive oil.
