Beef Curry

This delicious slow cooked curry is very lean yet full of hearty goodness. Spinach is packed with iron and vitamin C and the spices turmeric, cumin and coriander have endless health benefits.⠀

Ingredients 1⠀
1 onion quartered⠀
3 garlic cloves⠀
Thumb piece of ginger peeled⠀
1 red chilli seeded⠀
1 tbsp cumin seeds⠀
1 tbsp coriander seeds⠀
1 tsp turmeric⠀
1 tsp mustard seeds⠀
I can chopped tomatoes⠀
1 tbsp tomato purée⠀
2 jarred red peppers⠀
Bunch of coriander⠀

Ingredients 2⠀
1kg beef shin or feather steak cut into finger sized pieces⠀
2 tbsp plain flour mixed⠀
1 sliced onion⠀
3 potatoes peeled and cubed⠀
100g fresh spinach⠀
1 tsp Garam Masala⠀

Blitz all the ingredients from the Ingredients 1 list in a food processor. Set aside.⠀

Season the flour and toss the meat in it. Brown in batches in the groundnut oil. Set aside.⠀

Add the sliced onion and colour for 8-10 minutes before adding the spice/tomato paste. Let the paste sizzle for a couple of minutes before adding the beef and 200ml water.⠀

Bring to the boil then either simmer for 2 hours or put in a slow cooker or low oven (140 degrees) for 3-4 hours.⠀

Add the potato and either simmer or return to the low oven or slow cooker for a further hour or until the potato is tender.

Stir through the Garam Masala and then the spinach until wilted.⠀

Serve with rice if required but as this curry includes potato it also makes an excellent one bowl.⠀
