Anna’s Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Chicken Fajitas with Tomato Salsa, Onions and Red Peppers

A quick and easy lunch or tea for kids or all the family. What’s not to like?! My twelve year old made these more or less singlehandedly!

Serves: 4-6
⠀⠀⠀⠀⠀⠀⠀⠀⠀
6 chicken breasts cut into 1cm thick strips
2 garlic cloves crushed
2 tsp smoked paprika
1 tsp ground coriander
1/2 tsp ground cumin
Juice of two limes
2 tbsp olive oil
1/2 tsp Maldon salt
A few grinds of black pepper

Combine all the above ingredients in a bowl.

8-12 tortilla wraps

Mixed leaves

2 red peppers sliced

2 onions sliced

Fresh tomato salsa – to make your own combine 200g tomatoes finely chopped, 1/2 red chilli chopped, salt, pepper, 1tbsp olive oil & juice of half a lemon

Add a lug of oil to a frying pan and add the onions. Soften for 10 mins with a pinch of salt. Push them aside & add the peppers to the pan.

Colour for 5-10 mins.

Get a frying pan hot & add the chicken. Cook the chicken for 5-7 mins.
