Blood Orange, Chicken & Quinoa Salad

This salad is so fresh and pretty yet hearty thanks to the chicken and quinoa. Serves 3-4:-⠀

3-4 cooked chicken breasts, roughly shredded by hand⠀
4 blood oranges, 3 peeled and cut into disks, 1 reserved for the dressing⠀
3 heads chicory, leaves separated⠀
100g quinoa⠀
1 shallot finely chopped⠀
Mixed leaves⠀
2 tbsp pomegranate seeds⠀
2 tbsp flaked almonds⠀

Juice of one blood orange⠀
Juice of half a lemon⠀
1 tbsp Apple Cider Vinegar⠀
1 tsp Dijon mustard⠀
1 tsp honey⠀
4 tbsp olive oil⠀
1 garlic clove crushed⠀

Shake the dressing ingredients in a jar.⠀

Cook the quinoa according to packet instructions.⠀

Sweat the shallot in a lug of oil. Combine with the cooked and drained quinoa.⠀

Layer all the salad ingredients on a large platter or on individual plates. Drizzle with the dressing and enjoy!!⠀
