Cajun Chicken One Pot
Cajun Chicken Onepot. Exactly as it says – a chicken based family pleaser with a lovely warm hit all cooked in one pot, or roasting tray.⠀

INGREDIENTS
Cajun Spice Mix⠀
1 tsp paprika⠀
1/2 tsp black pepper⠀
1/2 tsp cayenne pepper⠀
1 tsp dried oregano⠀
1 tsp dried thyme⠀
1/4 tsp chilli flakes⠀
1/2 tsp salt flakes⠀
⠀
1kg skinless, boneless chicken thigh fillets each cut into 4 pieces⠀
2 tbsp Cajun Spice Mix⠀
2 red peppers cut into chunks⠀
3 red onions each cut into quarters⠀
250g new potatoes halved⠀
200g fresh spinach⠀
3 tbsp Creme Fraiche – we like Tims Dairy @timsdairyyogurt
Bunch fresh coriander roughly chopped
Combine all your spices in a bowl.⠀

Heat some oil in a pan and add the chicken pieces and 3 tbsp of your Cajun Spice Mix.⠀

Combine and colour before adding the potatoes, onions and peppers. Stir and either add a lid or transfer to a casserole dish and cover with foil.⠀

Put in an oven at 180 degrees for 1-1 1/2 hours. Uncover and stir through the spinach until wilted.⠀

Mix together 3 tbsp creme fraiche @timsdairyyogurt with 1 tbsp of the coriander. Either spoon on top or serve in a side bowl.
