Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Charred Peach, Asparagus, Mozzarella and prosciutto Salad

This fresh and summary salad takes just 5 minutes to prepare and simply involves charring peaches and asparagus on the barbecue or griddle and then combining these with Prosciutto and mozzarella. The dish is finished with a drizzle of extra virgin olive oil and balsamic vinegar and fresh basil. Omit the Prosciutto for a vegetarian option.

Serve simply with crusty bread and a glass or two of Etoile.

INGREDIENTS

2 firm peaches, halved and stones removed⠀
100g (6 slices) Prosciutto
200g fresh asparagus⠀
200g Buffalo mozzarella torn into 6 pieces⠀⠀
3 tbsp extra virgin olive oil⠀
1 tbsp good quality Balsamic vinegar⠀
Handful of fresh basil leaves⠀

Heat a barbecue or griddle and p to a medium temperature or a griddle. Lightly oil the cut side of the peaches and char them for 1 minute. Turn them 180 degrees and char again for another minute. Set aside.

Add the asparagus spears to the griddle and cook for 4 minutes. Set aside.⠀

Combine all the salad ingredients on a platter or individual plates. Season with salt and pepper, Drizzle with extra virgin olive oil and balsamic vinegar and finish with fresh basil leaves.
