Chicken and Chorizo Pasta with Peas
This dish ticks a lots of boxes. It’s hearty, it’s a one pot (minimal washing up), it’s quick to prep, it’s nutritious, it’s a family pleaser and it’s kind on your purse!

INGREDIENTS
400g pasta (I’ve used rigatoni)
1 onion chopped
2 garlic cloves crushed
200g cooking chorizo
400g cooked chicken breasts cut into chunks
400g chopped tomatoes
100g frozen peas
125g mozzarella
Pea shoots (optional!)

Cook the pasta according to packet instructions.
Slice the chorizo into 1cm pieces and colour in a pan with a tiny amount of oil. Set aside. The chorizo will have released a lovely rich oil.
Add the onion to the pan and soften for a few minutes before adding the garlic and chopped tomatoes. Season and simmer for 10 minutes.
Add the chicken, reserved chorizo and frozen peas and cook for a further 4 minutes.
Drain and stir in the pasta then tear up the mozzarella and dot around the pasta. Finish with the pea shouts if you wish!
