Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Chicken, Lemon and Fennel Traybake

Chicken, Lemon, Fennel and Garlic Tray Bake. Everything simply thrown into one tray – this dinner requires zero effort, just 40 minutes in the oven. I used black garlic but normal garlic cloves will work just as well.

Prep: 5 minutes
Cooking: 25-30 minutes
Total: 30-35 minutes

4-8 chicken portions, skin on. I used thighs and breasts
300g new potatoes
2 fennel bulbs
2 lemons, quartered
6 garlic cloves left whole
3 bay leaves
3 tbsp olive oil


Top and tail the fennel bulbs removing the woody ends but reserving the tops for later. Cut into quarters.

Throw all the ingredients (apart from the fennel tops) into a roasting tin. Give everything a toss and season generously.

Roast for 35 minutes. Sprinkle with the fennel tops and serve.
