Chilli Hash

Hearty Chilli Con Carne topped with sweet potato mash crisped up in an oven. 😋 Whenever I make a chilli I always make extra and stick portions in the freezer so I have quick meals at the ready for when we get home late post an activity or club. Instead of serving chilli with boring rice, try this combo. Just as quick and really tasty!
For the chilli either use this recipe for a minced beef version or look up my Ultimate Chilli which uses stewing steak and chorizo. And if you want a veggie/vegan option, I’ve got one of those on my feed and website www.annasfamilykitchen.com All bases covered!
Just peel and cube the sweet potatoes, boil for 30 minutes then mash with butter and black pepper.
Serves: 4-6
Prep: 15 minutes (if chilli is already made!)
Cooking: 60 minutes or all day if using slow cooker method
Total: 75 minutes

INGREDIENTS

800g beef mince⠀
2 red onions chopped⠀
3 garlic cloves crushed⠀
2 red peppers cubed⠀
2 cans kidney beans
2 tsp mild chilli powder⠀
1 tsp smoked paprika⠀
1 tsp ground coriander⠀
1 tbsp brown sugar
1 tbsp balsamic vinegar
200ml red wine⠀
800g chopped tomatoes⠀
300ml good beef stock⠀

Sauté the onions for 10 minutes. Add the mince and brown for 10 minutes.⠀

Add the garlic and spices followed by the balsamic and red wine. Let the wine reduce before adding the remaining ingredients.⠀

Cook for an hour on the hob or better still put it in a slow cooker or low oven (130 degrees) for as long as possible.
If making the hash, spoon the chilli into an ovenproof dish, top with the mashed potato and put in a hot oven if under a grill until the top is golden and crisp.
