Chinese Chicken, Broccoli & Cashew Nuts

Chinese Chicken & Broccoli with Cashew Nuts. Why not ditch the takeaway and have a go at your own Chinese fakeaway? My boys and their friends devoured this 20 minute meal, all cooked in one pan. Make sure you pick the chillis out before serving. They give the dish a bit of heat but may take the roof off your mouths if eaten!

INGREDIENTS

1kg chicken breasts cut into strips
1 tbsp potato starch or Arrow Root
2 tbsp honey
4 tbsp soy sauce
4 tbsp chicken stock
2 tbsp rice wine
1/2 tsp Chinese Five Spice
5 dried whole red chillis
2 tsp chopped fresh ginger
4 garlic cloves crushed
5 spring onions sliced
300g broccoli spears
4 tbsp cashews nuts
2 tsp sesame oil

Mix together the potato starch or Arrow Root with a tbsp water then stir in the soy, honey, rice wine, stock, garlic, Chinese Five Spice and ginger.

Set half of this sauce aside and to the other half add the chicken. You can leave the chicken to marinade or cook straight away.

In a large dry frying pan, add the cashew nuts and toast for a minute or two. Set aside.

Add 2 tbsp oil to the pan and add the chicken and chillis. Stir fry for 5 minutes then add the broccoli and the rest of the sauce. Cook stirring for 10 minutes before adding the spring onions and cashews. Give the pan another stir and finish with a drizzle or sesame oil. Serve with rice or noodles.
