Hoisin Chicken Pancakes

Chinese Hoisin Chicken Pancakes. Here’s a brilliant alternative to a Chinese Takeaway. Based on the concept of Asian Duck Pancakes here I’ve roasted chicken thighs in home made (takes 5 mins!!) hoisin sauce. Shred the meat off the bone using two forks and serve in Asian pancakes or tortilla wraps with cucumber and spring onion batons plus the left over hoisin sauce.

INGREDIENTS

8 chicken thighs, skin on, bone in

For the Hoisin Sauce:-
4 tbsp soy sauce
2 tbsp smooth peanut butter
2 tbsp honey or 1 tbsp dark sugar
2 tbsp rice wine
1 garlic clove grated or very finely crushed
1/4 tsp chilli flakes (optional)
1/2 tsp Chinese 5 spice
5 star anise
15ml water

Combine all the hoisin ingredients. Keep half aside and pour the rest over the chicken thighs in a roasting tray and roast for 25 minutes at 180 fan.

Turn over the chicken thighs so there’re coated all over in the sauce and return to the oven skin side up for 25 minutes more.

Pull the chicken apart using two forks and serve with Asian pancakes or wraps, cucumber batons, shredded spring onions and the remaining hoisin sauce.
