Chipotle Chicken, Pepper and Corn One Pot

Chipotle Chicken, Pepper and Corn One Pot. It’s hard to believe you can throw five ingredients into one pan and deliver such a tasty family friendly meal. I promise you can!! You could also add some new potatoes to the pan but I served this with rice and a green salad.

Cooking: 40 minutes
Total: 43 minutes

INGREDIENTS

8 chicken thighs, skin on bone in or 4 breasts or a mix!
5 tsp chipotle paste
1 tbsp olive oil
4 corn on the cob
2 red peppers deseeded and quartered

Coat the chicken with the chipotle paste, season and put in an ovenproof pan together with the peppers.

Drizzle with olive oil, season and cook at 200 degrees for 40 minutes (25 if using breasts).

Add the corn on the cob for the last 10 minutes, preferably turning them in the juices half way through.⠀
