Cod and Chorizo One Pot

Cod & Chorizo One Pot. Cod and chorizo work so well together. I’ve added cubed potatoes, mushrooms and seasonal runner beans to create this quick & easy 30 minute family meal.⠀⠀

INGREDIENTS

INGREDIENTS for 4:⠀⠀
4 pieces of cod fillet (I use my local fishmonger Sankeys)⠀⠀
200g cooking chorizo cut into 2cm slices⠀⠀
1 red onion chopped⠀⠀
2 garlic cloves crushed⠀⠀
600g potatoes, cubed and par boiled for 5 mins (there’s no need to peel them)⠀⠀
200g button mushrooms halved⠀⠀
200g runner beans cut into diagonal 2cm slices⠀⠀
1/2 tsp smoked paprika⠀⠀
Juice of a lemon⠀⠀
Fresh thyme

Heat a large pan and add a lug of oil. Colour the potatoes for 10 minutes before adding the onion and garlic. Continue to colour for 5 minutes.⠀⠀

Add the chorizo and thyme and cook for 5 minutes.⠀⠀
⠀⠀
Add the button mushrooms, the lemon juice, some seasoning and the beans. Stir then place the cod pieces on top.⠀⠀

Sprinkle over the smoked paprika and put a lid on the pan or put the pan in the oven for 8 minutes.⠀⠀

Finish with fresh thyme and serve!
