Cod, Chorizo & Orzo Traybake

All cooked in one pan and ready in 20 minutes, this is such a tasty dinner. Chorizo and Cod make a great couple. I love the addition of samphire but know it won’t be for everyone. You could switch it for peas or asparagus. Or serve a green on the side. Asparagus spears will need to be added to the pan for the last 5 minutes.

INGREDIENTS

4 cod fillets
250g cooking chorizo cut into disks
1 onion sliced
3 tbsp sun dried tomato paste
360g orzo
500ml stock
Seasoning
90g samphire

Heat an oven proof pan and add a tiny amount of oil, the chorizo and onion. The chorizo will release it’s own oils. Colour for 3-4 minutes.

Add the orzo and the sun-dried tomato paste. Stir then add the stock.

Nestle in the cod fillets and season well.

Roast for 10 minutes at 180 fan.

Fork some samphire around the cod, drizzle with a little olive oil and return to the oven for 3 minutes.
